Joe, Ethan and I went to the movie. This was my first test on my journey because I love popcorn! I made it through the movie without having the popcorn and besides my two protein shakes yesterday I had shrimp kebabs with salad and avocado. Here's the recipe and a picture of my dinner when I ate it.
Grilled Shrimp Kebabs with Salad – 4 servings
1 cup packed fresh basil leaves
1/3 cup macadamia nuts (I used cashews as I didn't have macadamia)
3 tablespoons balsamic vinegar
½ cup olive oil
1 pound shrimp, shelled and deveined
2 onions, cut into ¾ inch squares
20 cherry tomatoes
1 package mushrooms
2 avocadoes, sliced
1 Combine the basil, cashews, and vinegar in a food processor.
2 Process until finely chopped.
3 Add the oil in a thin stream with the processor running and process to desired consistency, scraping down the sides as necessary.
4 Thread 4 skewers, alternating shrimp, onion, mushrooms, and tomato.
5 Grill the kebabs until the shrimp and veggies are cooked.
6 Spoon dressing to taste over each skewer and serve.
7 Slice avocado evenly and place alongside the skewers.
8 Add a side salad with homemade dressing. (Mine was homemade Italian using olive oil, apple cider vingegar, and a mix of fresh herbs from my herb garden and dried spices)
I took two kebabs as I wanted to get more shrimp, two was too much with the salad and avocado. I would either skip the salad and have two kebabs with avocado or have the salad and one kebab with more shrimp on it. It was yummy!
